I honestly love a good, homemade shortbread cookie.  It may be one of my favs next to a Chocolate Chip.  This recipe is just so delicious, buttery and soft!  It doesn’t make a lot, so if I were you, I’d make at least 2 batches because it’s THAT easy to make!  ENJOY!

Brown Sugar Shortbread

  • 1 and 1/4 c flour
  • 3 tbsp cornstarch
  • 1/4 tsp salt
  • 1/2 c packed light brown sugar
  • 7 tbsp butter, softened
  • 1 and 1/2 tsp ice water
  • Cooking spray



Combine flour, cornstarch, and salt in a small bowl and stir with a whisk.


Place brown sugar and butter in a medium bowl; mix until combined; add flour mixture, and mix until combined.


Sprinkle dough with ice water and knead lightly 4 times or just until smooth.


Wrap in plastic wrap; refrigerate 30 minutes.


Preheat oven to 325 degrees and place dough on a baking sheet coated with cooking spray.


Press dough into an 8x5" rectangle about 3/8" thick.


Pierce entire surface liberally with a fork and bake for 25 minutes or just until set and edges are golden.


Cut shortbread into 24 pieces and let cool completely.
