Honey Corn Muffins with Buttermilk Substitute

As you probably could have guessed by now, I’m obsessed with corn bread/corn muffins.  However, not too long ago we needed a quick and easy corn muffin recipe, so these Honey Corn Muffins was the one we tested out.  It’s STINKIN’ delicious!!  :)  They’re so flavorful, moist, sweet, etc.; I seriously could go on and on about them!  :)  ENJOY!

Honey Corn Muffins

  • 2 eggs
  • 1 c. buttermilk
  • 1/4 c honey
  • 1/2 stick of unsalted butter, melted
  • 1 and 1/4 c cornmeal
  • 3/4 c flour
  • 1 tbsp baking powder
  • 1/4 c light brown sugar
  • 2 tbsp sugar
  • 1 tsp salt



Preheat oven to 400 degrees.


Whisk together eggs, buttermilk, honey and melted butter.


Add in cornmeal, flour, baking powder, brown sugar, sugar and salt; stir together just until combined.


Divide batter between muffin cups, filling 3/4 full.


Bake for 12-15 minutes or until golden; DO NOT OVERBAKE.
