I love a good snowball cookie and these are no exception! They look SO cute and have that different taste than a traditional Christmas Snowball cookie! :) Who doesn’t love Mint Chocolate Chip?! SO delicious that they’ll become addicting…I promise!! :) ENJOY!
Deliciously Cute Grinch SnowballPrint Recipe
- 1 c unsalted butter, softened
- 2/3 c powdered sugar + additional powdered sugar for coating
- 2 and 1/4 c all-purpose flour
- 1/2 tsp salt
- 1 tsp mint extract
- green food coloring
- 3/4 c mini chocolate chips
Line a large cookie sheet with parchment paper and set aside.
Beat the butter and powdered sugar together until light and fluffy.
Mix in the flour, salt, and extract just until combined.
Add the green food color a few drops at a time until your desired color is achieved; then stir in mini chocolate chips.
Refrigerate dough, covered, for at least 30 minutes.
Preheat oven to 375 degrees, then scoop out one tablespoon of dough at a time and form into a ball to place on the prepared cookie sheet.
Bake cookies for 7-8 minutes; you do not want the cookies to get more than very lightly browned on the bottom.
Let cookies cool completely on the cookie sheet then roll cookies into additional powdered sugar.
