Baked Sweet Onion Pesto Rice

As much as we all love the microwave and how quick and easy it is, I’ve tried to stray away from that and take on a much fresher and healthier approach by using a simple toaster oven.  I’ve come to find out that a toaster oven simply is a smaller version of the larger, kitchen range.  I’ve been using it to warm up leftovers, bake cookies, toast bread, etc., etc., etc.  However one of my favorite uses of the toaster oven is baking rice!  Yes, rice!  This Baked Sweet Onion Pesto Rice actually taste SO much better and is much fresher than the simple microwaveable version.  I definitely think you’ll love to make something like this as a side dish, as well as a quick and easy lunch!  The rice comes out tender, and just delicious; while the green onion ends up sweet and a little bit charred from the oven.  ENJOY!

Baked Sweet Onion Pesto Rice


  • 1/4 c white rice
  • 1/2 c water
  • 1-2 tbsp pesto
  • 2 stalks of green onion, diced
  • pinch of salt


  • Preheat toaster oven or regular oven to 350 degrees.
  • Add all ingredients into an oven safe bowl; mix.
  • Bake for 20-25 minutes or until water is absorbed and rice is tender.
